Ingredients for the Teff with Dried Fruit Medley

6.5 fl oz TEFF
9.5 fl oz WATER
3 fl oz + 1.25 t APPLE JUICE
3.25 T DRIED FRUIT MEDLEY


Directions for the Teff with Dried Fruit Medley

  • In a heavy bottomed soup pot, combine teff and liquids.
  • Bring to a simmer, stirring occasionally.
  • After 15 minutes, stir in fruit medley, and continue cooking for another 15 minutes, or until excess liquid is absorbed.
  • Add kosher salt to tast if desired.

Yield:     About 1 pint         Servings: 4         Serving Size: 1/2 C.

Ingredients for the Curried Teff

1 T OLIVE OIL
.5 T GINGER, MINCED
.5 oz ONION MINCED
.25 t GARLIC, MINCED
6 oz TEFF
1.5 t CURRY POWDER
12 fl oz. VEGETABLE STOCK
.5 t OREGANO, CHOPPED


Directions for the Curried Teff

  • Preheat pot over high heat, then place oil in pan.
  • Sauté onion, garlic, oregano and ginger until aromas are released. Stir in teff, curry and vegetable stock.
  • Bring to a boil then reduce heat and simmer over low to medium heat until teff is fully cooked, about 30 minutes.

Yield:     4 C.        Servings: 8         Serving Size: 1/2 C.
