Directions for Brown Rice Flour Mix
- Combine all ingredients and mix well.
- Reserve for service.
Tip: for enhanced flavor, add a pinch of Kosher salt.

Directions for Cajun Spice
- Mix all seasonings together.
|

Directions for Candied Pine Nuts for Chicken
- Mix together the fructose, agave syrup and Cajun spice.
- Stir in the pine nuts.
- Spread onto a silpat lined sheetpan and bake at 375 degrees for 8 minutes.

Directions for Chicken Entree
- Pre-heat large sauté pan over medium high heat; roll chicken in brown rice flour mix, shaking off excess flour. Spray pan with enough olive oil to coat bottom and sauté chicken until it is browned; flip and repeat on other side.
- Add in garlic and shallots. Sauté until aromas are released, and then add in tomatoes, spinach, basil and capers. Deglaze with apple & lemon juice and place chicken on top of spinach to keep it from drying out. Place in 400 degree convection oven and cook until done, about 5-6 minutes.
- Serve chicken on top of spinach mixture; pour remaining ingredients over top.
